
Studying Sustainability and Health in Southern France
Students in AHS 3003: Sustainable Approaches to Health in France returned from their time abroad in southern France a few weeks ago. Course instructors Dana Lovold, MPH, and Karin Hamilton, DVM, MPH write about a few highlights from the trip.

We recently returned from the two-week, immersive experience and have so much to share with you!
Nestled in the heart of southern France, Montpellier is not just a city; it's a vibrant hub of history, culture, and innovation. Here, amidst the cobblestone streets and ancient architecture, students have the opportunity to delve deep into the principles of sustainability and health, all while being enveloped in the convivial atmosphere that Montpellier is renowned for.
One student captures the sights and sounds in their description of the captivating “7th City of France”:
“I've really enjoyed how Montpellier has embraced its history and kept the ancient city alive and walkable within the city center, something that has allowed us tourists to experience, touch, and walk through what it was like to live here hundreds of years ago. I've grazed the walls of a thousand-year-old buildings and have walked down the oldest street in Montpellier, which not many people can say or appreciate. Lastly, I so much admire the views of Montpellier. Every time we see something new or different and think it can't get any better, it does. I have loved seeing the view from atop the Arc de Triomphe and looking down the length of the Aqueduct. It has been memorable to take my time sightseeing and capturing them to bring back and educate my family and friends.” - AHS 3003 student

One of the highlights of the course is a visit to an olive grove, where students learn about the centuries-old tradition of olive cultivation and its significance in Mediterranean cuisine and culture. Students participate in olive oil tasting and enjoy a delightful al fresco dining experience, featuring local and sustainable cuisine. This immersive experience provides insight into sustainable agricultural practices and fosters a deeper appreciation for the interconnectedness of food, health, and the environment.
But the exploration doesn't stop there. The course also takes students on a captivating journey to an oyster farm, where we gained insight into the delicate balance of marine ecosystems and the importance of sustainable aquaculture practices. Here, amidst the tranquil waters of the Mediterranean, students board a boat to learn about stewardship of the marine environment and the economic importance of oysters in the region. Students have the opportunity to sample the fresh shellfish during a scenic, seaside group lunch.

And, what better way to connect with nature and foster a sense of well-being than by immersing oneself in the breathtaking beauty of the Cevennes mountains? On an overnight stay in a hundreds-year-old stone home students disconnect from technology and reconnect with the natural world, while also gaining a deeper appreciation for the environment and its connection to health. We hiked a portion of the UNESCO World Heritage trail through the mountains, alongside a friendly donkey who transported our picnic lunch and water.
This excursion continues to be a favorite of students and elicits rich descriptions and deep reflection:
“We were accompanied by Nelson, a donkey carrying our supplies. His presence added a unique and memorable aspect to the hike. The sound of his hooves clattering against the rocky trail became a rhythmic backdrop to our journey. The trail itself was challenging, with steep inclines that made my legs burn and my breath quicken. Despite the physical strain, the beauty of the surroundings was captivating. The path wound through lush forests, opening up occasionally to reveal breathtaking views of the mountains. The greenery was vibrant, and the air was filled with the earthy scent of the forest." - AHS 3003 student

"The highlight of the hike was reaching a serene spot by a river for lunch. The sound of the flowing water was soothing, and the view of the surrounding mountains was spectacular. Sitting by the river, eating our simple meal, I felt a profound sense of peace and accomplishment. The combination of physical exertion and natural beauty made this moment stand out. It was bittersweet because, while I was extremely tired, the view and the experience were well worth the effort.” - AHS 3003 student
Another student shares their thoughts on the impact of movement in nature:
“Once we were on the hike, I was silent for the majority of the time.Thus, I was able to hear the birds chirping and the currents of the river. This was extremely peaceful for me. I was not using my phone. Instead, I was connected to nature. Being able to go outside and do a moderate hike after a semester of constant sitting, slouching, and avoiding the outdoors gave me a new appreciation for our planet and health.” - AHS 3003 student
Students use the United Nations Sustainable Development goals to compare and contrast Minnesota and Montpellier on progress toward these goals. To support the comparison, we engaged in lectures and discussions related to the French healthcare, education, and food systems and participated in sustainable gardening and zero-waste practices, along with a variety of other health and culture-related excursions.

In Montpellier, France, sustainability isn't just a concept; it's a way of life. Through this transformative study abroad program, students have the opportunity to immerse themselves in a culture that values harmony with nature, community, and personal well-being. From wine tasting, strolling through a Medieval city, and perusing Europe's oldest medicinal botanical gardens, to learning about how herbs can be used to promote health, AHS 3003 is as enriching culturally as it is academically.
